What E11 means on a Wolf cooktop
The E11 error code on Wolf cooktops indicates a boil-dry condition detected during cooking. The control system continuously monitors temperature using two sensors: the main RTD (Resistance Temperature Detector) and the RTD Steam Fill sensor. Under normal cooking conditions, these two sensors track closely together. When the RTD Steam Fill sensor reads significantly higher than the main RTD for a sustained period, the system interprets this as liquid having evaporated from the pan, triggering E11 and shutting down the element to prevent damage.
The specific temperature thresholds differ by model. On SM15TF/S units, E11 triggers when the RTD Steam Fill reading exceeds the main RTD reading by 35 degrees Fahrenheit for more than 10 seconds. On FM15TF/S units, the threshold is wider at 75 degrees Fahrenheit for more than 10 seconds. This differential is the key diagnostic metric: the system is not simply detecting a high absolute temperature, but rather a divergence between two sensor readings that indicates dry or near-dry conditions at the bottom of the pan.
The most common root cause is exactly what the name suggests: the pan has run out of liquid during cooking. However, debris or mineral scale buildup on the bottom interior of the pan can also create localized hot spots that cause false temperature differentials between the two RTD sensors, triggering E11 even when liquid is still present.
